Soft Molasses Cookies

1 cup shortening

1 teaspoon salt

1 cup sugar

3 eggs

1 cup molasses (Briar Rabbit)

4 cups flour

2 teaspoons baking powder

2 teaspoons pumpkin pie spice

1 tablespoon vinegar

 

Cream shortening and sugar, add molasses.  Beat in eggs, one at a time.  Mix in vinegar until batter is light and foamy.  Mix dry ingredients and add to batter.  Dough should be stiff enough to handle, if not add a little more flour.  Roll on floured surface ¼ inch thick.  Cut with cutter, sprinkle with sugar.  Bake on lightly greased cookie sheet at 350f for 12 to 15 minutes.
